Mini M&M Flourless Chickpea Blondies

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed


  • 1/2 cup natural almond butter (or peanut butter)

  • 1/3 cup  

  • 1/3 cup maple syrup (or agave)

  • 2 tsp vanilla extract

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup dark chocolate chips 

  • 1 Tbsp mini M&Ms for topping


Instructions:

  1. Preheat Oven: Preheat your oven to 350°F and grease an 8x8-inch baking pan with avocado oil.

  2. Blend Ingredients: In a food processor or blender, combine the chickpeas, almond butter, maple syrup, vanilla extract, baking powder and soda, and salt. Blend until the mixture is completely smooth.

  3. Fold in Chocolate Chips: If using, fold in the chocolate chips.

  4. Pour Batter: Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

  5. Sprinkle: mini M&Ms on top 

  6. Bake: Bake for 25 minutes, or until the edges are golden.

  7. Cool and Slice: Allow the blondies to cool in the pan for 20 min and then put in the fridge for 30 min to cool completely before slicing into squares.
