Protein Powder Brownies

These brownies are decadent, chocolatey, and simple to make in just one bowl! They are flourless, naturally sweetened, and provide 7 grams of protein per serving. Perfect for a gluten-free treat.

Ingredients

  • 1 cup smooth cashew butter

  • 2 large eggs

  • ½ cup pure maple syrup

  • ¼ cup milk

  • 1 teaspoon vanilla extract

  • ½ cup KOS chocolate protein powder

  • ¼ cup cocoa powder

  • ¼ teaspoon sea salt (omit if using salted cashew butter)

  • 1 teaspoon baking powder

  • ½ cup dark chocolate chips, plus extra for topping


Instructions

  1. Preheat: Set your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or line it with parchment paper.

  2. Combine Wet Ingredients: In a large bowl, whisk together the cashew butter, eggs, maple syrup, milk, and vanilla extract until smooth.

  3. Incorporate Dry Ingredients: Add the KOS chocolate protein powder, cocoa powder, sea salt, and baking powder. Mix until fully combined. If the batter appears too thick (this can happen based on the type of cashew butter or protein powder used), add a little more milk.

  4. Add Chocolate Chips: Carefully fold in the dark chocolate chips until they are evenly spread throughout the batter.

  5. Bake: Pour the batter into the prepared baking dish. Bake for 30 minutes, or until the center is set and a toothpick inserted into the middle comes out clean.

  6. Cool and Serve: Allow the brownies to cool completely in the pan before slicing into squares and enjoying!

Notes

  • Ingredient Tips: Different protein powders might absorb liquid differently, and the thickness of cashew butter can vary. Adjust the milk quantity as necessary to reach the preferred batter consistency.

  • Storage Suggestions: Keep any leftover brownies in an airtight container at room temperature for up to 3 days, or store them in the refrigerator for a longer shelf life.
